As above, after about a minute into the game the ground textures would pretty much rise up to Geralt's waist level. Alt-tabbing out and back into the game seems to fix it but it reappears after about 10 seconds. Is there any fix for this? I have tried reinstalling the game/ reinstalling my graphics drivers but to no avail.

Sometimes GPU overclocks and factory overclocks cause this kind of visual artifacts. This particular issue seems to occur most often on Radeons 69xx series.
If your GPU is indeed overclocked I'd recommend clocking it down to reference values. Remember that whenever you overclock a component you do it on your own responsibility. Making sure your graphics card is not overheating could also be helpful. Some users claim adding voltage in CCC may also help.
