The rules are like poker- if your "hand" is better, you win. You also get a chance to re-roll some or all of your die to improve your odds.

Check this wiki for what the various hands are called, and some nuances about winning: http://witcher.wikia...n_The_Witcher_2

For example, if I get III,III,III,V,II and you get I,I,I,I,IV you will win because you have a four of a kind despite having a lower value in each die.

But it's not as simple as getting the same value on each die.

For example, if I get II,II,V,VI,I and you get I,II,III,V,V, you will win because you pair is higher in value then mine, and also because you got three consecutive values.

In summary:

-try to get the same values on each die
-try to get higher values than your opponent's pairs, triples etc.
-try to get consecutive values

Advice: it's possible to use spatial visualization and the relative faces of the dice on the board to deduce how you should roll your die or dice to get certain values. This method is easiest when dealing with one die, but can also be used satisfactorily with two or three dice.
