Strange... never heard about such bug before... Probably you should try to apply to technical support thread, because it looks like technical bug...

Do you have any mods installed? The only thing I can think of is a conflict with a mod. The whole thing is very strange - the health is going down much too fast before it shoots up again (each tentactle should only remove about 25% of the health).

As I said, I think it would be worth looking at a savegame from just before the fight, if you can upload that to a hosting site.
