I have a crap load of flint and some of the holy flame candles, but cannot figure out how to light the shrines. I'm loving this game, but seeing as I've never done much of this type of RP, it's a bit cornfuzzling at times.

You give the candles to the shrines, as if they were a gift.  You don't have to light them with flint; they light automatically.

To give something, you can drag it from your inventory to the outstretched hand.  Double-clicking on the item in your inventory sometimes works, too.

I've made three new adventures for TW1; you can get them at corylea.com/.

I've also made a bunch of mods that fix bugs, kill annoyances or tweak gameplay; you can get those at the Witcher Nexus.

Activate the shrine (point at it and left-click). In the screen that comes up, you can transfer a candle from your quest items to the shrine.

There are some other objects you will find later in the game that work the same way.

Thank ya much. Figured it out and completed that portion of the quest with ease... Just needed to wait until after nightfall. *Sighs* I know, I know... Listen to / read the entire quest. Can I help it that I get so excited that I just run off to do the task? *Gives an innocent smile*

Perfectly understandable to be excited to play The Witcher! :-)  But it IS a good lesson for the rest of the game.  This game is fairly complicated, compared to some RPG's (e.g., Diablo, Titan Quest, Torchlight), and your journal is your best friend in this game.  Consult it often!
